The Easiest Chicken Noodle Soup!

If you're anything like me, you love solid, warm, nutritious meals, and you'd like them to be done FAST. Especially on a weeknight! I created this Chicken Orzo soup on a chilly Saturday this fall and I just love how quickly it came together, and how great it tasted! I used my Instant Pot (love of my life- and they aren't even paying me to say that!) and from start to finish, it took about a half hour to make.

These instructions will be using the Instant Pot, but it remains largely unchanged with a regular pot, just takes longer. Some of the speed is due to the shortcuts I take, such as pre-diced onions/celery & rotisserie chicken, but even if you don't it will still be a speedy dinner!


Chicken Orzo Soup


1 Yellow Onion - diced


5 Celery Stalks - diced


2 Tbs. Salter Butter


2 cups Matchstick Carrots


2 Rotisserie Chicken Breasts - diced


32 oz. Chicken Stock


8 oz Uncooked Orzo


Salt/Pepper to taste

Parsley, Bay Leaf, Thyme, Rosemary 2 Tbs. each

  1. Sautee the butter, onion, half of the celery, and the spices until the onions and celery are soft and aromatic.

  2. Add carrots, remaining celery, chicken, and stock. Use soup setting on Instant Pot and set it for 15 min. If using stove, cook at a low boil for 30 min.

  3. Stir in Orzo and put back on sautee ( or low boil on stove) for 5-7 min.

  4. Let sit for 5-10 min and serve!

I love to serve this with a nice green salad and warm,crusty Italian bread!
